At the unveiling, mayor Cllr Janet Johnson said: "I'm honoured to be here today to officially open Bentos Lunchbox and noodle bar.
"It's going to be run by a husband and wife team, Sue and Ste, and they are hoping it will be a successful business making healthy food daily using locally sourced produce.
"This shop has been empty for a long time and we are hoping that it will get a lot of passing trade through and also the actual foods that are going to be delivered and served to people is going to be something new for St Helens to help people get more healthy in their living habits."
Sue, also a self-employed personal trainer with a studio on Haydock Street, St Helens, says the eatery is something she has hoped to bring to fruition for a while.
"It is something I have wanted to do," said Sue, who lives in Haydock.
"I felt there was nothing really in St Helens that did healthy eating so it was just trying to get something here."
Sue, 38, will be serving the food with husband Ste an experienced chef preparing it.
"People have been saying there's nothing like it in St Helens and people are really excited about it and trying something new."
